Yeasts of the genus saccharomyces (sugar yeasts) are used for fermentation. "Magnesium..." refers to a magnesium salt. "Ferment" generally refers to a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria). "Hydrolysate" refers to a product of hydrolysis (separated by water, often by means of enzymes).
