Fungi of the genus monascus are used for fermentation. Ingredient on the basis of rice (oryza sativa) or rice bran. "Ferment filtrate" refers to the filtrate of a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria).
