Bacteria of the genus lactobacillus (lactic acid bacteria) are used for fermentation. Yeasts of the genus saccharomyces (sugar yeasts) are used for fermentation. "Calcium..." refers to a calcium salt. Carbonates are esters or salts of carbonic acid. Ingredient on the basis of or converted with (baker's) yeast. "Extract" generally refers to a solvent extract, eg with water, alcohol or carbon dioxide. "Ferment filtrate" refers to the filtrate of a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria).
