Substance information
Yeasts of the genus saccharomyces (sugar yeasts) are used for fermentation. "Extract" generally refers to a solvent extract, eg with water, alcohol or carbon dioxide. "Sodium..." refers to a sodium salt. Carbonates are esters or salts of carbonic acid. "Ferment filtrate" refers to the filtrate of a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria).
