"Acetylated" refers to the introduction of an acetyl group (CH3-CO-, the acyl residue of the acetic acid). This ingredient contains glycerol as alcohol component in esters or condensed with other (poly) alcohols or sugars. Stearates are salts or esters of stearic acid (octadecanoic acid). Palmitates are salts or esters of palmitic acid (hexadecanoic acid).
