Bacteria of the genus lactobacillus (lactic acid bacteria) are used for fermentation. Bacteria of the genus lactococcus (lactococci) are used for fermentation. Bacteria of the genus leuconostoc are used for fermentation. Ingredient on the basis of (cow’s) milk. "Ferment" generally refers to a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria). "Lysate" generally refers to a product of the breaking down (lysis) of cells or microorganisms.
