Yeasts of the genus saccharomyces (sugar yeasts) are used for fermentation. "Ferment extract filtrate" refers to the filtrate of a solvent extract of a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria).
