Bacteria of the genus lactobacillus (lactic acid bacteria) are used for fermentation. Ingredient on the basis of grape (kernels) (vitis vinifera). "Sodium..." refers to a sodium salt. Glutamates are salts or esters of glutamic acid (2-aminopentanedioic acid, an amino acid). "Ferment" generally refers to a fermentation product (mostly vegetable starting material, converted with enzymes, (yeast-) fungi or bacteria).
