"Aluminum..." refers to an aluminium salt. The name component "stearoyl" means that the ingredient contains, as fatty acid component, amongst others, stearic acid (octadecanoic acid) (mostly introduced via an acylation reaction). Glutamates are salts or esters of glutamic acid (2-aminopentanedioic acid, an amino acid).
