"Hydroxy..." generally refers to a hydroxy (hydroxyl) group -OH; the functional group of alcohols. Amides are generally conversion products of carbonic acids (carboxylic acids, mostly fatty acids) or other acids with nitrogen compounds (ammonia or alkyl and alkanol amines, amino acids etc).
