Gel-forming agents
Description
Gel-forming agents act as structure builders - they thicken a liquid phase or form a rubber-like gel. For this reason, they can also be used as thickening agents or for the stabilisation of emulsions. It is distinguished between natural (eg agar agar), inorganic (eg bentonite), semi-synthetic (eg carboxymethyl cellulose) and synthetic gel-forming agents (eg polyvinyl alcohol).
